How to cook salmon on a cedar plank

First, you need to get a plank to grill the salmon on. You can opt for various plank types, like cedar (most popular), alder, or cherry.

You can typically find planks at your local lumber store, the internet, or sometimes even your local grocery store in the grilling section. We recommend 12” x 4” sized planks and make sure you get untreated planks.

Each different plank will offer a slightly different taste, so Capt. Doug recommends trying all of them to find your favorite taste notes.

How to make this simple planked salmon recipe

  • Prep Time: 2 – 24 hours
  • Cook Time: 20 minutes
  • Serves: 4-8 people, dependent on the size or quantity of fish

Ingredients:

  • 3 (12” long x 4” wide) untreated planks (More details above)
  • 2 (2 pound) salmon fillets, skin removed
  • ⅓ cup extra virgin olive oil
  • 1 ½ tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • ⅓ cup soy sauce
  • ¼ cup finely chopped green onions
  • 1 tablespoon grated fresh ginger root
  • 1 ½ teaspoon minced garlic
  • 1 Lemon cut into slices (optional)

Steps:

  • Soak the cedar planks for at least 60 minutes in warm water. I prefer to soak my plank for at least 24 hours.
  • In a shallow dish, stir together the extra virgin olive oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic.
  • Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least one hour.
  • Preheat your grill to medium heat (350 degrees).
  • Next, place your planks on the grill (without the salmon). Let the boards begin to smoke and make a slight crackling noise.
  • Coat the filets with olive oil.
  • Take your salmon fillets out of the marinade and place them onto the planks.
  • Top fillets with 1-2 slices of lemon (optional)
  • Cover, and grill for about 20 minutes
  • Keep an eye on it, depending on the type of salmon you are using or size of the fillets, it could require less time.
  • Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill, so do not overcook the fillets.

This recipe is deliciously paired with grilled asparagus, roasted vegetables, and/or any rice dish.

Enjoy!
