Oven Roasted Salmon Recipe
Catch and Cook with Cannon Downriggers
For this recipe, Capt. Doug Saint-Denis recommends a 6-pounds of Coho Salmon fillets, which will provide a dinner for four. Larger Coho will provide more servings.
This recipe will work for any salmon species. Adjust to the cooking time for the species fat content.
How to make this simple oven-roasted salmon recipe
- Prep Time: 5 minutes
- Cook Time: 22 minutes
- Serves: 4 - 10 people, dependent on the size or quantity of fish
Ingredients:
- 2 medium salmon fillets or 4 small salmon fillets (Large Salmon fillets will feed 6 – 10)
- Kosher Salt
- Cracked pepper
- 1 lemon, thinly sliced
- Herb sprigs (16-20) – Use equal amounts of rosemary, thyme and pineapple sage
- 2 green onions, thinly sliced
- 1/4 cup (1/2 stick) of butter, cut into small chunks (Ghee works very well too)
Steps:
- Spray a baking dish or pan with a non-stick spray
- Heat oven to 400 degrees
- Pat fish dry with paper towels
- Place 6-7 sprigs in the baking dish and place fillets on top of the sprigs
- Season both sides of fish with kosher salt and pepper
- Add remaining sprigs on top of the fillets along with butter pieces, lemon and green onions
Bake the fish for 22 minutes in a preheated oven.
Serve with asparagus, Brussel sprouts, roasted vegetables, or green salad.
