This delicious and simple recipe is perfect for individuals following a low-carb eating style or diabetics who enjoy fried fish. This is a very simple recipe that requires only a few ingredients.

How to make this simple keto-friendly salmon recipe

  • Prep Time: 5 minutes
  • Cook Time: 10 minutes

Ingredients:

  • 1lb walleye fillet serves two
  • 1-2 eggs per every 1lb of fillets
  • Regular or BBQ Pork Rinds
  • Real Butter
  • Optional: Lemon slices

Steps:

  • Beat eggs in a shallow bowl to create your egg wash
  • Crush pork rinds - simply mash them up in a gallon storage bag or you can use a chopper
  • Set your non-stick frying pan to low and melt approx. 1 tablespoon of butter in a non-stick frying pan per 1lb of walleye
  • Dip the walleye fillets in the egg wash and then toss the fillets in the crushed pork rinds
  • Transfer fillets to the non-stick frying pan 
  • Cook until golden brown turning at least once (3-4min)
  • The fish should be flaky when done. (Internal temp of 145°F)

Serve with lemon slices (optional) and any side salad or french fries - Enjoy!
